I have two garlic cloves with really healthy looking sprouts poking out of them. I think they want to live again. Can I plant these and grow them out? How deep, when, and any other advice would be welcome. I have little experience with bulbs and none with garlic.

Garlic bulbs
Stick 'em in the ground about 4" deep, sprout UP. In spring or early summer when the foliage dies down the way daffs do, dig them carefully, wash well, and cure in a shady place for 2 weeks.
Each clove will produce a whole bulb.
Darius, if I plant them 4" deep, the sprout will be totally underground. Is this what you mean? Do I need to start them indoors until after danger of frost? Will the other cloves that have not sprouted also grow out? See how little I know?

Yes, the sprout will be underground. Doesn't matter. No need to start indoors. All cloves,, sprouted or not, thusly planted will also grow, just be sure to get them right-side up.
I plant mine a little deeper but I'm in a colder zone. I plant mine in the Fall for spring/summer harvest. Sometimes they will grow some green shoots above ground in late Fall, die back and re-grow when it warms up in spring.
