Easy Italian Chicken (Atkins Friendly!)

I just finished making this myself for my mom, it smells delicious, but I haven't tasted it yet. Perfect for dinner and it's Atkins friendly too.

1 Boneless Chicken breast
1 Egg
½ c. Milk
½ tsp. Garlic Powder
¼ tsp. Onion Powder
1 tbs. Fresh Garlic (finely chopped)
½ tbs. Fresh Small Onion (finely chopped)
Italian Spices (dried)
½ tsp. Lemon
1 tbs. Melted Butter

Preheat oven to 350 degrees.

Take the boneless chicken breast and pound flat to ½ “ thick.

Beat together egg and milk. Dip in the chicken. With a sharp knife, make shallow slices into both sides of chicken. Set aside.

In a separate bowl, mix together garlic powder, onion powder, fresh garlic and fresh onion. Add Italian spices and lemon juice and mix.
Stir in butter until it forms a paste.

Rub onto both sides of chicken. Brown chicken in olive oil on the stove. Remove and fold foil over the chicken forming a pouch. Place chicken in oven for 30 minutes, serve and enjoy.
