Basic Meat Sauce for Pasta

Ingredients

1 Carrot, minced
1 small Onion, minced
2 stalks Celery, minced
2 Tablespoons Olive Oil
1 C Red Wine for beef sauce or White Wine for a meat sauce with turkey
1 lb ground beef or turkey
1 29 oz can of tomatoes, diced
1to 2 cubes bouillon (beef or chicken)



Procedure

Items needed: saute pan and a large saucepan with lid


Saute the carrot, onion and celery inolive oil over medium heat. Cook until lightly caramelized. Add beef or turkey and brown. Drain fat and return to heat. Add wine and let boil for 5 minutes to burn off the alcohol. Transfer food to a saucepan and the can of tomatoes and the bouillon cubes. Heat to boil and then simmer, covered, for 3 hours. Stirring occasionally.

Near the end of cooking add your desired spices, except for garlic since that needs to be added near the beginning.
