I guess this cold winter weather is causing me to have "tomatoes" on the brain! Maybe these tomato cake recipes will fix me until springtime. LOL

GRANDMA HALL'S TOMATO SOUP CAKE
1 cup sugar
1 teaspoon baking soda
Pinch of salt
1 ½ cups flour
1 teaspoon cinnamon
1 can tomato soup
½ cup raisins
1 tablespoon melted butter
Preheat oven to 350 degrees. Mix ingredients together well. Bake at 350
degrees for 50 to 55 minutes. Ice with Cream Cheese Frosting.
CREAM CHEESE FROSTING
2 cups confectionary sugar
3 ounces cream cheese (softened)
1 egg white
¼ cup butter
1 teaspoon vanilla
Beat with fork. Very good icing.

FRESH TOMATO CAKE
1 c Dark brown sugar
1/2 c Shortening
2 Eggs
3 c Flour
2 ts Baking powder
1 ts Baking soda
1 ts Nutmeg
1 ts Salt
2 c Fresh ripe tomatoes; peeled,
1/2 c Chopped nuts
1/2 c Chopped dates
1/2 c Chopped raisins
Old Farmer's Almanac Hearth & Home 1993 Companion Cream sugar
and shortening.Add eggs. Add sifted dry ingredients, mixing well Stir in
tomatoes, nuts, dates, and raisins. Put into greased and floured 9x inch
baking pan. Bake in preheated 350'F oven for 35 minutes or until cake tests
done. Frost with cream cheese frosting.
Tomato Soup Spice Cake

Bet you can guess the secret ingredient in this extra moist and rich spice
cake – perfect with your favorite cream cheese frosting for the sweetest of
endings!
Ingredients:
2 cups all-purpose flour
1 1/3 cups sugar
4 tsp. baking powder
1 1/2 tsp. ground allspice
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1 can (10 3/4 oz.) Campbell's® Tomato Soup
1/2 cup vegetable shortening
2 eggs
1/4 cup water
Cream Cheese Frosting (recipe follows)
Directions:
PREHEAT oven to 350°F. Grease 13" x 9" baking pan.
MIX flour, sugar, baking powder, allspice, baking soda, cinnamon and cloves in
bowl. Add soup, shortening, eggs and water. Beat until mixed, using mixer at
low speed. Beat 4 min., using high speed. Pour into prepared pan.
BAKE 40 min. or until done. Cool in pan on wire rack. Frost with Cream Cheese
Frosting. Serves 12.
Tip:
Cream Cheese Frosting: Beat 1 pkg. (8 oz.) cream cheese (softened), 2 tbsp.
milk and 1 tsp. vanilla in bowl until creamy, using mixer at medium speed.
Slowly beat in 1 pkg. (16 oz.) confectioners' sugar, mixing until smooth and
of spreading consistency. (Add a little more milk if needed.) Makes 3 cups.
