I was needing something warm and filling tonight. I started messing around in the kitchen and then plugged all the ingredients into fitday.com to come up with the nutritional value of 1 cup. The only thing I can see wrong with it is that it is high in sodium. I may try to cut that down next time I make it, and use hot sauce instead of salt. The beef broth has enough salt already.
It's not the good old rich veggie soup we are used to, but it's filling, satisfying and low cal. Oh, and it's WARM! It's -5 degrees here right now, and the warm makes up for what's lacking in it. LOL
I'd love to hear what others are eating throughout this diet. Any recipes that you've tried and liked would be GREAT. One of the reasons I usually fail on a diet is because I get stuck in the rut of eating the same stuff and just get so tired of it that I start slowly sneaking a little of this and a little of that.....I think everyone knows the scenario. Maybe if we can share recipes we've tried, it will help with that problem.
Homemade Veggie Soup ( A diet filler)
10 baby carrots sliced
1 stalk celery, sliced
¼ yellow onion, diced
½ green pepper, diced
½ red pepper, diced
1 can swanson’s beef broth
2 cans whole tomatoes
29 oz. Water
¼ tsp. Basil
¼ tsp. Thyme
¼ tsp salt
1/4 tsp pepper
1 can sliced mushrooms, (small can, drained)
1 small can tomato sauce
Mix all together and cook just until veggies are starting to get tender. I didn’t want to overcook the veggies, because I wanted something to chew on.
