I "attempted" to make homemade cherry vanilla fudge. I followed the recipe exactly, cooked to 238*F, cooled to 100*F, added vanilla, beat till thickened then added the chopped marachino cherries and poured in the pan to cool overnight just like the recipe said. The candy is still very soft and kind of grainy. I know it's something I did wrong, but I don't know what it could be.
What did I do wrong?
