Amount Measure Ingredient -- Preparation Method
1 large lemon, cut in pieces seeds removed but
-leave the rind and peel intact (REALLY)
1 1/2 cups sugar, (scant)
4 eggs
1/2 stick margarine (1/4 cup)
1 teaspoon vanilla
1 9" unbaked pie crust or graham crust
Preheat oven to 350. Put everything except pie crust into a blender or possible a food processor (she uses a blender). Let it whirl like crazy for a little while. Mixture will be quite foamy. Keep it whirling til smooth and no lumps are left in the margarine. Pour it into a pie crust and bake it for 40 minutes. It will set up like custard. Serve warm or at room temp or even chilled. It can be served plain or with a little ball of fruit sorbet or sherbet or even a dollop of whipped cream. NOTE: "I like it very tart so I use a little additional lemon in the recipe." Kay
NOTE: I made this 7/11/00. This is so easy and DELICIOUS! I left it in the oven for neary 50 minutes. A real keeper, this!!
