A Really, Really Good Pizza Sauce

Hammonton, NJ(Zone 6b)

"Bottle-It-and-Sell-It" Pizza Sauce (makes about 1 qt.)

4 sundried tomato halves (soaked in boiling water and drained)
1 can ground plum tomatoes (28oz)
1 jar roasted red peppers (12oz)
4 medium cloves garlic - crushed
3 tablespoons extra virgin olive oil
1/4 teaspoon citric acid (lemon juice)
1/8 teaspoon dried chili peppers
1/4 teaspoon onion powder
3/4 teaspoon salt or to taste
1/2 teaspoon sugar
1/4 teaspoon pepper or to taste
2 tablespoons fresh herbs minced (or 2 teaspoons dried)
basil - oregano
1 tablespoon fresh parsley, minced

In a small bowl, cover sundried tomatoes with boiling water. Let stand 5 minutes
and drain. Drain the red peppers, then place them, along with sundried tomatoes
and canned tomatoes in a food processor and process until smooth (a couple of
minutes).

In a medium saucepan, over low heat, saute the garlic in olive oil to soften. Stir in
tomato pepper mixture and cook about 5 minutes. Add remaining ingredients and
cook another five minutes. Adjust salt and pepper to taste.

Cool well before using.

PS: A really strange title....but a wonderful pizza sauce! This is my favorite. Can't recall how I came to have this recipe.
Just thought it would be a good recipe to share, since I imagine a lot of pizza snacking will be going on between the two holidays!
