"Cooking" with PVC pipe

Not cooking actually - just presentation :) Some years ago we were doing a Birthday dinner party for my Mom's 75th. I wanted to do something really special. DH took a long piece of 2" diameter PVC pipe and cut it into 3" lengths. I cleaned them thoroughly of all burrs and put them in the dishwasher. I had and still have 22 of them.

I diced avocados, tomatoes, spring onions, basil, yellow peppers, red peppers and marinated them in a vinegarette for about 1/2 an hour. I also used some sprouts and something else I can't remember :)

Anyhow, we stood all the PVC pipes on baking sheets and started filling them in layers - a couple thin layers of avocado for good sticking ability. The marinade had enough oil in it that we didn't need to pre-lubricate the pipes. Popped them all in the frig til time to serve; put one finger on the top to 'hold' and pulled off the PVC. Probably the prettiest and most commented on salad 'towers' ever.

We were thinking about those PVC pipes and started looking for other ways to use them. We found this - it'll give you an idea of what the presentation looks like.

Next time my in-laws are coming for lunch, we're going to try something special again for them.

Any of you have ideas for stacked stuff like this? Gotta be cold as you certainly can't 'cook' in PVC ;)
