ok, I just put it there-
the link was in a recipe forum
but I remember a recipe share here in the Brug forum.

anyway, putting it here too

see my altered recipe below the dashed line-
and also the end for other suggestions

SINGLE SERVING CHEESECAKES original recipe: to make 24 (short ones)

PUT 24 PAPER LINERS INTO MUFFIN PANS
24 nilla vanilla wafers, one in each liner
MIX IN LARGE BOWL:
2 8 oz pkgs cream cheese
3/4 c sugar
2 eggs
1 tablespoon lemon juice
1 teaspoon vanilla
BEAT UNTIL FLUFFY - DO NOT OVERBEAT
fill each liner about half full
MIX IN A SECOND BOWL:
16 oz sour cream
1/4 c sugar
spoon that on top of first mixture
BAKE 375 ° 15-20 MIN
COOL COMPLETELY
spoon on top:
one can pie filling

Karen recipe: to make 48 tall ones w/ more flavor
(bigger cheesecake layer and more lemon & vanilla)

PUT 48 PAPER LINERS INTO MUFFIN PANS
48 nilla vanilla wafers, one in each liner
MIX IN LARGE BOWL:
3 lbs cream cheese (6 8oz pkgs)
2 1/4 c sugar
6 eggs
4 tablespoons lemon juice
2 tablespoons vanilla
BEAT UNTIL FLUFFY - DO NOT OVERBEAT
fill each liner about half full
MIX IN A SECOND BOWL:
32 oz sour cream
1/2 c sugar
spoon that on top of first mixture
BAKE 375° 20 MIN
COOL COMPLETELY
spoon on top:
2 cans pie filling
***recipe works just fine with fat free cream cheese and fat free sour cream and Splenda sweetner-
-ALSO WITHOUT FRUIT TOPPING, OR WITH FRESH FRUIT MIXED w/ LITE PIE FILLING
also chocolate cheesecakes w chocolate cookie bottom, add unsweetened cocoa powder to cheesecake mixture,
and top w/ chocolate toppong (Smuckers DOVE chocolate is best)
use your imagination- add other extracts (flavorings) or toppongs
bottoms can also be crushed graham crackers and walnuts w a little butter & cinnamon

they ARE good

I bring them to work for Christmas every year.
I used to just bring a smattering of flavors and let them pick. Now I "take orders" to be sure each person gets their flavor. (I also make extra of many for the non-voters) There are tons of flavor combinations when you play with different extracts and fruits. Try cherry with almond extract or chocolate with "bailey's irish cream" extract.
wow, I am making myself hungry

I like making them the "light" way for myself. I use nonfat sour cream and nonfat cream cheese. Then I use light pie filling, adding extra fresh fruit to it.
My hubby CAN taste the difference of splenda sweetener, so I don't use it for his, just nonfat. He loves the chocolate variety.

Karen...I make the large cheesecakes that everyone loves, but what a good idea to make the minis! So much neater too! I am sure everyone loves you, especially with getting their own favorite flavor!!! Sounds yummy! I will have to try them!
