This is one way to cook the same old things with a new and tasty twist!

Rosemary and Garlic Spinach Cakes
Makes aprox. 6 cakes

2 tsp. olive oil
1 cup chopped onion
3 cloves minced garlic
1 pkg. Frozen chopped spinach, thawed
2/3 cup instant potato flakes
2 eggs, beaten
1/4 cup grated Parmesan cheese (I used Feta)
2 tsp. fresh rosemary, minced OR 1/2 tsp. dried, crushed
1/2 cup unseasoned bread crumbs
Salt and Pepper to taste

Heat olive oil in a non-stick pan over medium heat. Add onion, garlic and spinach and sauté for about 3 minutes. Add remaining ingredients and combine well. Mixture should be thick and scoop-able. Scoop into 1-3/4 inch balls and flatten into patties. Spray pan with vegetable oil and sauté both sides of cakes until golden brown. Place cakes on non-stick baking sheet and bake at 375º F until heated through. Enjoy as a side dish or serve with marinara sauce.
