Spinach Pancakes

Spinach Pancakes

Make 4 servings (2 pancakes each).

Prep 10 min. Total: 30 min.

Mix 1 (10oz.) pkg. frozen chopped spinach, thawed and drained, 1 small onion, chopped, and sautéed until onion is translucent.

Mix 8 slightly beaten eggs in large bowl.

Heat 2 Tbsp. oil in large non-stick skillet over medium heat. Pour about 1/4 cup egg mixture per pancake and top with a portion of spinach mixture. Sprinkle about 1 Tbsp. Feta Cheese on top of each pancake.

Cook 2 min. per side turning once, until pancake is golden brown on both sides. Top each serving with 2 Tbsp. Sour Cream, if desired.
