For darius - and everyone else - Obsessive Olives

darius and all, this recipe if from my HayDay cookbook and yes, they are really good!

Obsessive Olives

7 oz (1.5 cups) small green olives (Spanish manzanilla if possible) - remove pits!
1 large garlic clove, peeled and finely minced
1/2 c. red wine vinegar
1/2 c. light vegetable oil
1/2 tsp. red pepper flakes
1 Tblsp. minced onions
1 tsp. fresh parsley minced
1/2 tsp. dried oregano

Combine all the ingredients in a small bowl, cover, and set aside to marinate at room temperature overnight, stirring occasionaly to distribute the flavors. Stored in the refrigerator, the marinated olives wil keep well for several weeks, just stir before serving.

Serving suggestions other than just eating :) Chop and blend into softened cream cheese for a tangy bagel spread, or add a little tuna and mince in a blender for a green olive tapenade.

From personal experience, these can be addictive :)
