* brown lentil soup * for Lisa !!

Rethymno, Crete, Greece(Zone 10b)

Welcome to the hungry layman's meal

1/2 kilo (or 1.5cups) brown lentils
2 onions, chopped
2 -3 cloves garlic, chopped
2 - 3 big ripe red tomatoes, chopped (I like the skins in the soup)
olive oil, to taste (wife Eleni makes this superb - sometimes does not add oil intensionally, you add to your dish, it is more aromatic... )
2 -3 bay leaves (leaf laurel or whatever you call it)
water to cover them all and 1 inch more.
salt, pepper - some like a chopped chilly
1 teaspoon vinegar
Boil in a pressure cook for 1/2 hour, uncover, continue boiling until creamy. Be careful, it sticks and burns in the bottom of the pot if it is too thick, or the heat too strong. Serve th esoup hot.

Eat it with anchovies in vinegar, or with feta cheese, or with taramosalata, and of course fresh crumbly bread.
Avoid this as a dinner - it is rather heavy.
