Cranberry Scones/Biscuits

Springboro, OH(Zone 6a)

Someone asked for this recipe, but I can't recall who it was, sorry :) It's scones if you eat it at breakfast, biscuits if you eat them with dinner/supper :) That's my professional definition :) ~smirk~ They are a little bit sweet to counter the tartness of the cranberries. Mmmm, good. Love to make them with ham or turkey as main dish. Enjoy!

Cranberry Biscuits

2 1/2 C. all purpose flour
2 1/2 t. baking powder
1/2 t. baking soda
3/4 C. cold butter, cut into small pieces
1 C. coarsely chopped fresh cranberries
2/3 C. sugar
3/4 C. buttermilk

Mix together cranberries and sugar in a small bowl and set aside

Mix together first three ingredients in a large bowl (I chill the bowl beforehand)
Cut in butter until mixture resembles coarse crumbs
Gently work the cranberries/sugar into the mixture
Slowly add buttermilk
Place dough in "biscuit-sized" spoonfuls on cookie sheet

Bake at 400 for 12-15 minutes

note: keep dough from getting too warm, the butter needs to stay cold and also avoid over-working the dough. Use a light touch and the biscuits will practically fall apart while you're eating them. They don't need anything on them, although some real butter lovers do add some butter at the table. Hope ya'll like em :)
