Granola

Keaau, HI(Zone 11)

Sitting here reading mail, and eating my breakfast...thought you might like the recipe for this Granola. DH and I love it...and it is very healthy!!

8-10 cups of rolled oats (not instant). I like to use a 4 grain mixture or Scotch Oats which is about the same thing. 2-3 C generic (cheap) puffed rice or millet or....(adds a lightness).

1/3 C. (or more....) of the following
Sesame Seeds
Sunflower Seeds
Pumpkin Seeds
Slivered Almonds
Walnuts

Heat 1/3C oil (like Canola) and 1/3C honey and drizzle over the mixture. Toss and stir the mixture so that everything gets coated. (at this point I also add a big T of cinnamon and/or a splash of vanilla and/or allspice...depends on how I feel about it.

Bake at around 300 (350 if you are in a hurry), stirring from time to time, until it is browned. I like mine really toasted...

I eat mine with Cranberries (sometimes raisins, dates, other dried fruit or fresh fruit), sliced banana, a big dollop of non-fat yogurt and milk.

This Granola turns out to be a lot cheaper than storebought stuff, and has a fraction of the sugar/oil, and no preservatives. Everything is available in bulk.
