BEST SLOW_COOKED BURRITO FILLING -EVER

Tellico Plains, TN(Zone 7b)

1 lb pinto or red beans ........................... 2 tsp. Chili Powder

3 lb. Roast ...........................................1 tsp. Cumin

7 cups Water ....................................... 1 tsp Oregano

1/2 cup Chopped Onion ......................... 1 can chopped Chilies

2 cloves garlic , minced ......................... Flour Tortillas

1 tsp. Salt ............................................ Your choice of Fixin's

~ Substitute spices and peppers to your taste. ~

Rinse beans, boil 2 minutes. turn off heat and soak for 1 hour.
Put all ingredients in Crock Pot -or- Heavy kettle.

Cover & simmer 5 hours or until roast falls apart and beans are done.
Shred meat with a fork and return to kettle of beans.

Uncover and cook for 1/2 hour until desired thickness( Watch carefully to avoid scorching)

This is the best B&B filling this side of Burritoville.

I usually freeze some for later . This makes enough for the whole Clan .... lol
