I used to work at a fine hotel in Portland Oregon called Park West Hotel many years ago. they used to make this great appitizer with Scallops and Oysters.
You take a scallop and place a water chestnut on top and wrap it in bacon slices so that it holds it all together and broil. Very easy and great for holiday entertaining. You do the same with the oyster.
I can't get my DH to try them as he hates fish but everyone else raves about them.
Heheh, I almost lost my DH before I married him as I tried to feed him some fried oysters. He sweetly ate one and then told me that he loved me but if I loved him to never feed him oysters again. They always say that the way to a mans heart is through his stomach so I have never feed him another oyster .
He did like the BBQ jumbo shimp that I marinated in garlic and olive oil with a dash of Balsamic vinegar.
I have to admit that I didn't care for the fried oysters either. I prefer them raw with a little horseradish and cocktail sauce.
