My turn to share a wonderful recipe!

Baltimore, MD(Zone 7a)

I have gained so many wonderful recipes from this forum, I thought I would share this one. It is a real "oldie" but easy to do and it serves 20. It can be done in a jiffy and looks so luscious!

"Easy Time Holiday Squares"

1-1/2 cups sugar
1 cup butter
4 eggs
2 cups flour
1 Tbsp. lemon extract (or juice)

1 can cherry (or any other) pie filling
Confectioner's sugar

Pre-heat oven to 350 degrees

Directions:

-Beat butter and sugar in bowl at medium speed until light and fluffy.
-Add eggs, one at a time, beating well after each
-At low speed, add flour and lemon extract (juice)....I use the extract!

-Pour batter into a well-greased 15"x10"x1" jelly roll pan.
-With a dull knife, or a spatula, mark batter off into 20 squares (4 lengthwise--5 across)
-Place a heaping tablespoon of pie filling in the center of each square.

Bake in 350 oven for 45-50 minutes. Remove from oven.

While still warm, sift confectioner's sugar over cake. Cool. Then cut into 20 squares.
