Dumplings - need recipe for the flat, heavy kind

Pocahontas, TN(Zone 7b)

I like the heavy, flat, shinny kind, no fluffy ones for me. They are kinda like a thick egg noodle but homemade out of regular flour, I think. Same as used in Sweet Sue Chicken & Dumplings, but Sweet Sue has way too much salt for me!! (nasty) Anyone have a recipe?
