Green Amaranth, Redroot Amaranth, Pigweed, Wild Beet (Amaranthus retroflexus)

I have this plant that I thought was a weed come up in my yard in zone 8 all the time during the summer. I pull them out but they keep coming back!

Here too....They produce so many seeds it's almost impossible to get rid of them.

Have you ever tried to eat them (try to cook the leaves , it's like spinach). Indeed it is consumable when coocked. In Mauritius it grows in wild and specially in sugar cane fields and it very appreciated in kitchen.Here it is called "bred malbar". The word "bred" is a venicular name for every leaves which is consumed coocked.Some variety have thorn (spine) and some have redish leaves and are also consumed. Fondly timrann.
