This is the best salsa I have ever had. I am a true Texan, and my mother-in-law is Mexican and a wonderful cook... I say that to give "expert" status to my opinion. Ha! We have this at every family gathering on my husband's side, and we literally hover over a big vat of this stuff eating like ravenous dogs until it's gone! Also, I prefer hot stuff. Hot like sear off your taste buds. This salsa/pico is very mild, in fact, no heat to it at all. Yet it's still my favorite! So give it a try with all your tomatoes you are trying to use up!!!
2 large tomatoes- chopped
3 or 4 green onions- chopped
1 small can of chopped green chilies
1 small can of chopped black olives
3 TBS olive oil
1 and a half TBS white vinegar
1 tsp garlic salt (not powder)
Mix all ingredients together and chill. Chill at least 24 hours. The longer it sets the better the flavor. In fact, I think it tastes best left over... if you have any left over.
DO NOT try and substitute anything for the green onions or it will taste like poop. You can adjust the garlic salt to your taste, but again remember that the longer it sits, the more intense the flavors will become so you will want to follow the recipe in the beginning and adjust later if necessary. I personally like LOTS of garlic, but that's just me.
