Low Fat Taco Salad

Paris, TX(Zone 8a)

My husband and I made this over the weekend. It was very easy and tasted great...

1lb ground Chicken
1 can fat free refried beans
1 taco seasoning packet (Kroger brand is great)
Lettuce, tomato, and whatever fresh veggies you like
white corn tortillas (uncooked)

brown ground chicken and follow directions on season packet, then mix in refried beans and cook until hot.
Line a cookie sheet with wax paper, and lay out 6 tortillas (my dh and I use 3 each). Give each one a shot of non fat cooking spray, and a dash of salt. Bake in 400 degree oven until brown (ours takes about ten minutes).
cut up veggies, and put in a bowl. Crunch up tortillas on the veggies, then top with a spoonful or two of the meat/bean mixture. You can add salsa to your liking. Cheese is optional.

My husband and I make indivisual salads for ourselves (We always have too much meat/beans, which can be refrigerated for future salads), but for a large family, you can make one big salad.
