hot pepper sauce

i've posted this recipe before but i thought i would throw it out there again in case anyone new to daves garden would like to try this really good tasting delight

you will need -
hot peppers (you can use as many as you want, with as much heat as you can take. i use a combination of habaneros and thai hots, about ten of each.

1 red or yellow bell pepper, seeds and all cut into 1/4 inch slices
1 tbl red pepper flakes
16 turns with a pepper mill or about 1 tsp regular pepper
1/2 tsp kosher salt
2 loves of garlic thinly sliced

dice the hot peppers as small as you can, or better yet, use a food processor

in a two qt pot add all ingredients except the garlic. add enough oil (not olive oil) to cover the peppers by two inches. bring to a boil. reduce heat and simmer for 5 minutes, stirring once in a while. take off heat and add the garlic.

when cool, pour into glass containers and cap. leave on counter for seven days before using.

you can use this several ways. you can either use just a drop of oil and add it to your favorite pasta dish or you can take a 1/2 tsp of peppers and put them on sandwiches or on whatever you make for dinner. the thing that makes this different from the hot sauces you buy from the store is taste.

note - i do not put this in the fridge. i have left this sauce out on my counter for over a month and nothing happens to it. naturally, you can put it in the fridge but remember to take it out about an hour before you use it as the oil can get thick.
