"Easy as Pie" Lime Pie

Murfreesboro, TN(Zone 7a)

MizMunchkin's post about key lime pie made me think of this super easy and very refreshing "ice box pie"

1 graham cracker crust (deep dish if you can find it)
1 can frozen limeade concentrate (or margarita concentrate if you prefer)
1 small tub Cool Whip (can use low-fat/nonfat), softened
1 pint vanilla ice cream, slightly softened

Allow juice concentrate (and ice cream if it isn't already partially thawed) to sit at room temp for a few minutes (if the ingredients are frozen rock-hard they won't blend well, and you'll get an uneven consistency)

Place in large mixing bowl and mix on low just until blended. Using a spatula/bowl scraper, gently stir/fold in the whipped topping (if you mix it in with an electric mixer, it'll lose it's volume)

Gently spoon into the pie shell. Cover and freeze for several hours or overnight until frozen. Use a hot knife to cut it, and serve immediately. (And when they ooh and ahh, don't tell 'em it was this easy!)
