Gourd and mutton.

Mirpur (A.K), Pakistan(Zone 9b)

Ingredients:

Gourd
1) Gourd- cut into 2-inch cubes 1kg
2) Onion paste- 2 medium sizes.
3)Ginger-garlic paste 1 teaspoon (tsp) full
4)Coriander powder-1 tsp
5)Cumin pwd- 1/2 tsp
6)Salt, red chili pwd- as per taste
7)Black pepper pwd - 1/2 tsp
8)Oil- 1/2 cup

Mutton
1) Mutton (bone less) ½Kg
2) Salt-1/2 tsp
3)Tomato- chopped, 4 medium sizes

GARNISH:
Chopped coriander leaves, chopped green chilies.

How to Prepare:
For this recipe, Gourd & Mutton are prepared separately, and then mixed together.
Mutton:
In a vessel, take mutton, water, salt, & tomatoes, & boil the mixture till the mutton is done. Once done, stir it for a minute with a spoon so that the tomatoes blend well in the mutton. Keep aside.
Gourd:
Boil the gourd pieces in water.

In a pan, take 1/2 cup oil, heat it on medium-high flame, & add onion paste, ginger-garlic paste, and all the ingredients listed under 'Gourd.'
Add the gourd and mutton in the mixture and mix well with a spoon. Check the salt; add more if needed.
Fry till the oil separates from the masala (mixture), stirring continuously.
Add 1/4 cup water and cover the pan and cook on a medium flame till done.
Once done, Garnish with coriander leaves, green chilies.
Enjoy with rice or Roti.
