Company Plum Cake

Castlegar, BC(Zone 6b)

Now that you've harvested all your plums...

COMPANY PLUM CAKE

1/4 C soft butter
2 eggs
1 C sugar
1 1/2 C flour
1 tsp baking powder
1/2 C milk
2 Cups pitted Plums

Topping

1/4 C brown Sugar
1/4 C soft butter
1 tsp cinnamon


Cream together the butter, eggs and sugar. Stir together the flour and baking powder in a separate bowl. Add half the flour to the egg mixture, then the 1/2 cup milk and then the rest of the flour mixture. Pour the batter into a greased 9X9 pan. Place the plums on top with the skin sides up. Spoon the topping on top of the plums.

Bake at 350F for 45 minutes.

While cake is baking, mix together 3/4 cup of icing sugar, 1 tbsp of milk and 1/4 tsp of almond flavourin, (you can use vanilla in a pinch). Drizzle over cake when it comes out of the oven.
