I've purchased this delicious condiment in a 12 oz. jar at larger scale grocery stores in the past, and am wondering if anyone has a recipe for it. It's not the standard pimento/pimiento readily available in small (2-4 oz.) cans, and I suspect it's Italian in origin.
I have bell peppers fresh from the garden, along with a fair selection of vinegars I always keep stocked, so I'd really like to try my hand at making it myself. :)
