Zesty Grilled Chicken Fajitas

Spokane, WA(Zone 5b)

I made up this recipe, using the Lawry's Chicken Fajita packets. I didn't follow the directions (at all) and they ended up a big family treat:

4 boneless skinless chicken breasts
2 packages Lawry's Chicken Fajita packets
Juice from two med. sized juicy limes
1/8th cup white vinegar
1/2 cup chopped fresh cilantro
1 tsp garlic powder

Mix all the ingredients (except chicken) in a marinating pan. Add chicken breasts, coating both sides, and marinate for at least two hours in the fridge, shaking or flipping every once in awhile.

Slow grill on BBQ on low heat

Slice the breasts and add to:

Burrito sized flour tortillas (heated & browned)

I serve with the following:

1) Julienne Green Peppers, Sweet Onions & Olive Oil

2) Chopped tomatoes

3) Grated Sharp Cheddar Cheese

4) Fresh, chopped Cilantro

5) Sour cream & Salsas
