I traveled to Ecuador a couple of years ago, and we had cheese empanadas almost every day as an appetizer. They were delicious, but now I can't find any recipes for cheese empanadas-- mainly just meat or dessert varieties. Does anyone know how to make the Ecuadorian-style cheese empanadas, or even what kind of cheese is used?
