16 oz fresh mozzarella cheese cut into 1" cubes
1 small jar roasted red peppers, drained and cut into strips
2 cloves garlic cut in half
1 cup lt. virgin olive oil-add more if needed
1 &1/2 Tbsp. dried oregano, or you can use fresh
1 tsp crushed red pepper flakes
1 tsp. fresh rosemary
Combine cheese, pepper strips and garlic in a qt. jar and set aside. Mix olive oil, oregano, & crushed pepper. Pour over cheese in jar. Add rosemary. Cover tightly and shake well. Chill 4 to 8 hours. You may drain to serve entire contents of jar; or serve just a few pieces at a time. May be kept refrigerated for 3 weeks.- in oil.
