Advice on saving Leek seed?

Howdy! =)

I have some Leeks that are in seed & I want to save them for next year. I've never saved Leek seeds before though & don't really know what to expect here?
Here is a pic of their current stage, they're about 6ft tall...

I'd sure appreciate any advice on these? How close are they to being ready? Will I get seeds or little Leek sets?

Can I advise you? Yes, and No, LOL.

I saved seed from my leeks and garlic by tying small brown paper bags over the seed heads as they were close to maturity. That's the Yes part!

For the No part... well, the seeds are still in my seed box because I moved so I cannot say what may have grown.

Can't hurt to try, no matter the outcome.

I was wondering if these things were going to start dropping seed, if the little flowerettes would be the seeds? or what? LOL

The bees have been going nuts on these for a while now.
