Don't you just love tortilla rollups? This has been quite a hit at all the parties and potlucks dinners I've taken it to, and it's just plain pretty. I'm interested in seeing what combinations ya'll have tried, as well!
In general, we like to keep flour tortillas around for whipping up quick microwave snacks of veggie quesadillas (sharp cheddar cheese along with mushrooms, scallions, bell peppers, black olives, cherry tomatoes) and/or refried bean and cheese burritoes.

"Dijon mustard and roasted peppers give these tortilla roll-ups extra spice. Make them ahead of time, store in the refrigerator, and slice right before serving. They make ideal snacks, and are popular for parties, too." - author
8 ounces cream cheese
2 tablespoons Dijon mustard
3 scallions including tops, chopped
1/4 cup shredded zucchini
1/4 cup shredded carrots
6 flour tortillas, 8-inch diameter
12 to 18 large fresh spinach leaves
12 ounces roasted red peppers, whole sweet, drained and patted dry (pimientos in wine vinegar)
3/4 pound Deli Thin Oven Roasted Turkey Breast
Mix together the cream cheese and mustard in 2-quart mixing bowl until well blended. Add scallions, zucchini, and carrots to cream cheese mixture, mixing well.
To assemble tortilla roll, place tortilla on parchment paper. Spread each tortilla with about 1/4 cup cheese mixture to within 1/2-inch of edge. Cover with 2 or 3 spinach leaves, pressing lightly into cream cheese mixture. Top each with 1 or 2 pieces of red pepper and 2 slices of turkey, keeping the layers as flat as possible. Roll up tortilla tightly, jelly roll fashion. Wrap each securely in parchment paper. Refrigerate seam side down at least one hour.
To serve, cut each roll crosswise into 1-inch slices with serrated bread knife; place on lettuce-lined platter.

The jars of whole roasted red peppers were on the pickle aisle of the grocery store, and were packed in a light wine vinegar -- very tasty all by themselves!
