Roasted Green Beans with Garlic

These resemble french fries, but are so much shorter on calories and fat! And so easy for an appetizer!

Roasted Green Beans with Garlic

"If you've never had green beans done this way in the oven, you will be amazed at the flavor it develops. Use only thin, tender haricots verts or another stringless variety. Avoid larger, mature beans, as they will be tough." - author

3 pounds tender young green beans
1 garlic head
2 tablespoons extra virgin olive oil
3/4 teaspoon salt, more to taste

Wash and trim the green beans. Separate and peel the cloves of garlic. Combine the beans, garlic cloves, olive oil, and salt in a large bowl, and mix until all the beans are lightly coated with oil.

Spread the beans and garlic on two large baking sheets and roast them in a 400 degree F oven for about 35-45 minutes. Roasting time will vary with the size of the beans. They are done when they have a somewhat blistered look and are beginning to brown in spots. Try one -- if you like it, it's done.

Pile the roasted beans on a platter and serve them hot or at room temperature, as a finger food or on a plate with other foods.
