onion pie

Rutland , MA(Zone 5b)

1-1/3 cups biscuit/baking mix
1 tsp rubbed sage
1 tsp salt
4 to 5 tbls milk
filling
5 cups thinly sliced medium onions
2 tbls vegetabe oil
1/2 tsp salt
1 egg
1 cup half and half

in a bowl, combine the biscuit mix, sage and salt. add enough milk untill mixture holds together. press onto the bottom and up the sides of a nine inch pie plate, set aside. in a large skillet, saute onions in oil until tender. sprinkle with salt, spoon into crust. in a bowl, beat egg and cream, spoon over onions.
bake, uncovered at 375 deg. for 15 minutes. reduce heat to 325 deg. bake 25 - 30 minutes longer or untiol a knife inserted into the center comes out clean.
serves 6 to 8
