Baked Chicken Wings

Lutz, FL(Zone 9b)

One of my favorites, for hotheads or not. The Bleu Cheese dressing should be made ahead so the flavors blend and of course the sauce can be made ahead.

6 pounds chicken wings
3 Tbs oil
12 cloves garlic, chopped
Habanero (or other chile) powder to taste (optional)

Arrange wings on baking sheets in a single layer. Bake at
425 for 35 minutes (or desired doneness). I rotate the pans halfway through cooking time. When cooked, drain and discard drippings and toss with:

1/2 C ketchup (Heinz)
scant 1/4 C white vinegar
2 Tbs Tabasco sauce
1 Tbs Habanero sauce
fresh ground black pepper to taste

Serve with Bleu Cheese Dressing and celery sticks:

1 1/3 C mayonaisse (Hellman's)
2/3 C sour cream
4-8 oz crumbled bleu cheese
4 scallions including green tops, chopped
