Chinese Open-Top Cabbage

Seward, AK(Zone 3b)

This spring, I intended to order seeds for Savoy Express cabbage, but ordered a Chinese Open-Top variety called 'Lettucy Type'. I planted it, and I have to say it 's pretty interesting, but now that it is ready to set flower, I need to harvest. What do I do with it?

It has formed a loose head with thin leaves similar to a rubbery lettuce, but has a mustardy flavor. Do any of you folks have experience with this variety? Do I put it in salad, steam it, boil it, or give it to the neighbors? Here's a photo... p.s. matures in 45 days.
