Hey EVeryone, Porcupine Beef is just a western term for this, but try it, and you'll be like Mollybee, wanting me to make more. I am very picky about my hamburger meat, and about meatballs, but this you've gotta try!!!!!!!! Read and see!!!
Porcupine Beef:
Ingredients:
1 lb ground beef
1/2 cup of uncooked rice
3 eggs beaten
1/4 cup finely chopped sweet green pepper
And a LITTLE jALAPENO PEPPER, BUT NOT TOO MUCH. NOT EVEN A 1/4 CUP.
1-14 1/2 oz. CAN OR BOTTLE, of can stewed tomatoes
1-12 oz. can of beer or light beer, but I substitute mine with tomato sauce and water added together. Unless there is a beer in the frig, and I'll use about 1/2 of it, and the rest tomato sauce.. Tou can't taste the beer at all.
3 tsp 0f chili powder
1 cup of Pace Picante (mild/med)
And ofcourse Salt and pepper to taste.
Mix together the ground beef , rice, eggs, and chopped peppers. Shape into 6 large or 8 med balls. Put in frig so it will hold together better, but only while you are fixing the other ingredients.
Combine tomatoes,beer optional, (substitute w/tomato sauce and water if u want), and chili powder in a large skillet. Heat to boiling on medium/high to boiling and then turn down to low /med.
Carefully drop in meatballs into hot skillet with tomato sauce mixture;
Cover over and simmer for 45 min- 1 hour. Checking often.
Make with it whatever suits your taste, and usually cornbread is a good choice of bread, skillet potatoes, or baked potatoes cut into 1/4's amd seasoned with salt, pepper, and a lil garlic powder, or lemon pepper. And whatever else suits your taste!!!
