4 boneless, skinless chicken breasts
10 peeled garlic cloves
1 green pepper, thinly sliced
1 jalepeno pepper, diced
Olive Oil
Cumin
Brown the garlic, peppers and cumin. When wilted, remove from pan.
Brown chicken breasts. When browned on both sides, add garlic/pepper mixture on top, a slosh of white wine or sherry and cover. Simmer until done...or just about done. Turn down heat.
Remove breasts from pan. Add 2 HUGE spoonfulls of LowFat or Non Fat Sour Cream to mixture - mix. Put breasts back in...turn off heat. Serve. Salt to taste.
Rice would be good...as would potatoes...to serve with.
We ate this with salad.
