We went to the local market today and got some ground bison. I am going to try Bison Manicotti but wondered if there was a spice I should definitely use or NOT use.
It's my understanding that bison needs little cooking time or it will be tough. The farmer sells ALL of his best steaks off to the restaurants and never has any left for the public.
Any hints would be greatly appreciated.
