Round up recipies

Ok, so what does everyone take to a round up? We are having our first ever in Colorado next weekend, and although 20 people are coming so far, only 5 or 6 have committed to food, and much of that is salads.

Help! Those of you who have done roundups before, please give us some suggestions of things to take. Main dishes in particular.
