Years (ages ago) I had dinner with a hispanic family in Chicago. They made a nice Mexican meal and made a Spanish or Mexican Rice, from scratch, that was to die for. WAY better than anything you can make out of a box.
Seems to me, they steamed white rice, and then fried it with other stuff (like stewed tomatoes, or just the juice, and seasonings) - something like that.
Anyone have any of these treasured recipes to share?
