has anyone used spelt flour? i have a customer that can't eat whole wheat. would her allergies be affected by unbleached bread and all purpose flour too?
she wants me to make her bread using the spelt. can i make a raisin bread with half spelt and ap flour or would it have to be all spelt?
from what i've read the spelt is a dence flour and doesn't rise.
