cracklin pork shank with fire roasted applesauce

went to visit my son in philly a few days ago. never been there before. it was great. reminded me a of a mini n.y.c. with the narrow streets etc. he took us to a steak house called smith and wolensky. he said i had to try this pork dish.
out they come with the huge 2 lb. piece of pork all crispy. they take the pork shank slow cook it for several hours and then they deep fry it until the skin is nice and crisp. it was terrific. the apple sauce had red roasted hot peppers in it.
i think i might like to try it here at home.
