We have a large Mexican population here, and Cinco de Mayo (May 5th) is a BIG celebration (fiesta). This recipe was in our newspaper today. Try this as a dip with Margaritas, hire a Mariachi band and have a party, OLE'.
GUACAMOLE
3 ripe avacados
2 tablespoons lime juice
2 tablespoons lemon juice
2 plum tomatoes finely diced
1/2 med onion finely diced
1 jalapeno pepper (with seeds if desired)
1 garlic clove, minced
2 tablespoons chopped,fresh cilantro (I never use this)
coarse salt and freshly ground pepper.
Halve avacados and remove pits. Score flesh into cubes with knife and scrape into bowl. Stir in other ingredients Season with salt and pepper. If you put it in the 'fridge to keep, be sure to put plastic wrap ON THE SURFACE of the guacamole instead of just over the bowl.
