Fresh Fruit Cobbler

Cortlandt Manor, NY(Zone 6a)

FRESH FRUIT COBBLER

Fruit Mixture
2/3 cup white sugar
2 T. flour
3 c. fresh fruit (peaches, cherries, blackberries, blueberries, raspberries or strawberries)
2 T. butter

Topping
1 c. flour
2 T. white sugar
1 ½ t. baking powder
½ t. salt
½ c. shortening
3 T. milk
1 egg
Heavy cream, whipped sweetened with sugar

In a small bowl, mix sugar and flour. In an 8 or 9 inch nonstick baking dish, layer the fruit. Sprinkle sugar and flour mixture on top. Dot with butter. Set aside. In a medium bowl, sift flour, baking powder, and salt. Add sugar, then shortening, milk, and egg, and stir with a fork until thoroughly blended. Drop by spoonfuls on fruit.
Bake at 350 degrees for 25-30 minutes. Serve warm with whipped cream.

Makes 8 servings.

Note: If using peaches, add ½ teaspoon of cinnamon and mix

(I like this made with a mix of strawberries and blueberries.)
