Chicken Salad Recipe

Kathy @ Misty Meadows Farm's Chicken Salad

1 12 ounce canned chunk chicken
¼ - ½ cup shredded cheese (I use a mixture of cheddar, Colby, Monterey jack)
¼ cup sunflower kernels
¼ cup cut up red or green grapes (I prefer green, but go with the sweetest)
1 or 2 stalks celery with leaves, chopped up
½ cup or more Hellmann’s Mayonnaise
Salt and pepper to taste

Drain the chicken and rinse well. With your fingers, break up the chicken so that it looks like its shredded. Add all other ingredients. Add mayo to consistency that you like. Serve on soft bread with shredded lettuce or on a bed of shredded lettuce or just lettuce leaves. Add some tomatoes to your sandwich, if you’d like.

Put about an ice cream scooper full of salad on your sandwich.

There should be enough here for 3 or 4 sandwiches, depending on the size of your bread.
