I made this the other night and it turned out so nice, I thought ya'll would like the recipe.
1 1/2 cups oil
4 eggs
1 tsp ground cinnamon
whisk this together till eggs are blended in a big bowl
add...
4 med/large carrots grated
1 small can of crushed pineapple, drained well
mix up with fork
add...
2 cups self rising flour and 2 cups of sugar that you have stirred together in a bowl to mix
you can add a cup of pecan pieces if you want...it's good either way.
stir all of this till blended well
pour in a greased and floured bundt or angel food cake pan
bake at 325f for 50-55 minutes
cool and ice with favorite frosting...or not...I like mine with no frosting.
no mixer needed...just stir and go...my kind of home made.
