"Catfish Rouge"
2 lbs. catfish fillets, chucked
1 bell pepper finely chopped
1 onion small and chopped
1 teaspoon butter
2 cloves garlic minced
1 large can kidney beans
1 lbs. can tomatos un-drained
6 oz Tomato paste
salt, red pepper and black pepper to taste
...Season fish and set a side Saut'e bell pepper; onion and garlic in butter until tender. Mix well. Add beans and tomatoes. Cover and simmer 15 minutes. Add fish. Cover and simmer 20 minutes or until fish is cooked.
