Talk about "GOOD"...

I received this recipe in a newsletter from Carolina Country Cooking. I made it yesterday for dessert after our corned beef and cabbage dinner. Everyone loved it. There's only a little slice left and there were only four of us for dinner.

I used real butter as called for and don't think I would substitute margarine, because the butter flavor is so delicious.

I'm going to make it again this weekend. The heck with the calories....

President Kennedy's Irish Bread

2 cups flour
3 tsp. baking powder
1 cup sugar
3/4 cup milk
1/2 tsp. salt
1 stick butter
1 cup raisins
1 whole egg and 1 egg yolk

Mix flour, salt and baking powder together. Cut in butter with fork or pastry blender until it is pea size.

Stir in sugar and raisins.

In another bowl,mix milk and the eggs that have been well beaten.

Add this to the flour mixture. Stir well, but do not beat.

Pour into a well buttered loaf pan and bake in a preheated oven at 350 degrees for about an hour or until a toothpick comes out clean

( I tried to use Shoe's tip to make the "degree" sign but it won't work for me )
